There's a lot of interest these days in raw milk. The health benefits are documented, but so are the issues with pasteurized / homogenized milk. If you'd like to connect to the raw milk community in north Texas, here's your opportunity!
Grow North Texas is sponsoring a workshop with Pamela Klein Johnson, owner of Rose Creek Farms in Alvord and Wise county Weston A. Price Foundation Chapter Leader. She will be demonstrating how to make soft cheese, yogurt and butter using raw milk from a farm in Montague County.

Changing Your Diet Series: First steps
When I became concerned about the quality of the food my
family was eating, it seemed like an overwhelming task to revamp our diet, and
not just in terms of information overload.
What was the difference in cost?
My family can be picky, and the thought of spending extra money on organic
products that they might not eat was troubling.
I had to take small steps.

Planting it Forward
We planted onions on Saturday at Wendy Akin's farm in Terrell. She offered us a few rows to plant donation crops, so we brought some volunteers and headed out there. Her soil is a sandy loam that will grow just about anything, and we just had to poke our finger in the soil, insert the onion and then push some soil back over the ball to cover it. Simple.
When these onions mature, we'll harvest them and they'll be donated through our networks to families that need them, so when you look at this picture, don't see a planted field. See a dinner table.
Thank you to Wendy Akin, Sonja Gold and her wonderful boys, and Josh and Ashley from Spring Fed Farms CSA for helping us plant it forward.

Moving Forward...Lots to Share!
Some of you may know that the nonprofit I work with (Grow North Texas) is in the process of setting up an Eco-Hub in Northwest Dallas. Holy Cross Lutheran Church has given us space to garden and teach, and we have an extensive list of classes available in the next few months. These classes are taught by various instructors, and we're excited to be able to partner with these organizations and offer this information!
Take a look at what we currently have scheduled, and you'll want to check back because we'll be adding classes every day! We'll be starting a traditional foods series in April with Pam Johnson of Rose Creek Farms, which will begin with Yogurt, Cheese and Butter. Pam is a Weston A. Price chapter leader and has much to share.

Come learn about the benefits of soaking your grains and beans before cooking, how you can improve the nutritional profile of your food, and make it more easily digestible. Nut and seed milks, a soaked food, will also be covered. This class will save you a ton of money on nut milk and show you how to customize your own for personalized flavor. I'll have samples of Mexican Chocolate Milk made with hemp seeds, rejuvelac made from sprouted rye berries, oatgurt a soaked fermented porridge, sprouted bean salad, and sprouted greens! We'll be make maple pecan milk, coconut milk, cardamom & cream chia pudding, nut cheese spread, and lentil bugur salad. I'll be pulling back the curtain and removing the mystery from sprouting.
